Acai and Acai Bowl's have been pretty popular for a while now but they're also delicious! The best part about an Acai Bowl is how simple they are to make and you can add whatever delicious toppings you prefer!
I thought I would share how I prefer to make mine and staying healthy all in one!
INGREDIENTS:
ACAI BOWL:
- 1/3 an avocado
- 1/2 a banana
- 1/2 cup frozen blueberries and raspberries
- 1 tablespoon acai powder or puree
- 1/4 cup unsweetened coconut milk
- OPTIONAL: Cinnamon and vanilla per your liking
FRESH TOPPINGS:
- 2 thinly sliced fresh strawberries
- 1/2 a banana
- fresh blueberries
- 5 chopped or whole raw almonds
- 1/2 - 1 tablespoon unsweetened coconut flakes
INSTRUCTIONS:
Combine your avocado (plain, greek, or coconut yogurt can be substituted instead of avocado), banana, frozen blueberries and raspberries, acai powder or puree. For the acai I use the pureed Acai Superfruit pack from Sambazon, this can be found at Fred Meyer or any other frozen fruit isle. Finally add your unsweetened coconut milk, almond milk, or water if preferred and blend all these ingredients in your blender until it reaches a smoothie like consistency.
Finally pour your acai mixture into a bowl and top with your favorites! This a perfect time to use the other half of the banana too! You can top your acai bowl with anything from berries, raw nuts, coconut, nut butters, or even have fun and make a tropical themed topping with mango, pineapple, coconut, and more!
